Navara: a medicinal rice, known for its beneficial effect on digestion, circulation and the respiratory system.
Poongar: contains a high content of iron, which helps improve haemoglobin, and add antioxidants to the body.
Karunkuruvai: filled with nutrition, improves stamina and immunity and is a great source for Vitamin E.
Karuppu Kauvani: a rich source of dietary fibre, it has anti-inflammatory, and anti-oxidant properties, is gluten-free and can control cholesterol and diabetes.
Preparation: Traditionally, puttu is made in bamboo logs. Today, you can easily find a puttu maker in the market, or use an idli maker to make puttu.
Take 1 cup of Veyr Puttu Flour in a mixing bowl or a pan. Add salt as desired.
Mix well, and sprinkle, not pour water all over it. Be careful when you’re doing this, because the consistency depends completely on the water to rice flour ratio. Mix by hand to form a breadcrumb- like consistency.
Make sure there are no lumps. In the puttu maker, add 2 cups of water to the bottom vessel and place on gas stove. Once the water is simmering gently, place the round perforated disc in the cylindrical portion of the maker. Now add a few teaspoons of fresh coconut to the disc. Add a few spoons of the dough.
Repeat the coconut-puttu combination, ending with a layer of coconut at the top. Close the lid and place the cylinder on top of the vessel, with the water at a boil.
Place at medium heat, and let it cook, till you see steam emanate from the vent with a very good aroma This might take anywhere between 5 to 9 minutes, depending on the size of the puttu maker. Remove the cylinder, let it cool for a few minutes and now, gently remove the steamed puttu and serve hot.
It pairs well with a simple vegetable or potato stew. A Kerala kadala curry is the best way to enjoy this dish. Or just pair it with some bananas and cane jaggery.
It’s delicious in all its ways. Ingredients: Maapillai Samba rice, Navara rice, Poongar rice, Karunkuruvai rice and Karupu Kauvani rice. Usage Caution: Always use a dry spoon.
